Bacon-Wrapped Chicken with Honey Glaze

4 boneless, skinless chicken breasts

8 slices of thick-cut bacon

1/2 cup honey

2 tablespoons Dijon mustard

1 tablespoon soy sauce

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh thyme leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prep the Chicken: Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, garlic powder, and paprika.

      Wrap the Chicken: Take two slices of bacon and weave them around each chicken breast, starting at one end and rotating until the entire breast is wrapped. Tuck the ends of the bacon underneath the chicken to secure them.

        Make the Glaze: In a small bowl, combine honey, Dijon mustard, and soy sauce. Mix until well blended.

          Place in Baking Dish: Arrange the bacon-wrapped chicken breasts in a baking dish. Brush a generous amount of the honey glaze over each wrapped chicken breast, reserving some glaze for later.

            Bake: Place the chicken in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).

              Glaze Again: In the last 5-10 minutes of cooking, brush the chicken with additional honey glaze for a beautiful shine and extra flavor.

                Broil for Crispiness (optional): For extra crispy bacon, switch to the broil setting for the last 2-3 minutes, keeping a close eye on it to prevent burning.

                  Rest and Serve: Once done, remove from the oven and let the chicken rest for 5 minutes. Garnish with fresh thyme leaves and serve while hot.
