Back-to-School Lunchbox Pasta Salad

This easy-to-make dish combines elbow macaroni with a medley of colorful vegetables like cherry tomatoes, cucumbers, and bell peppers, all tossed in a tangy dressing. 8 oz. elbow macaroni (or your favorite pasta shape)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell pepper, diced (any color)

1/2 cup red onion, finely chopped

1 cup sweet corn (fresh, canned, or frozen)

1/2 cup black olives, sliced

1/4 cup fresh parsley or basil, chopped

1 cup mini mozzarella balls (bocconcini)

1/3 cup olive oil

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 clove garlic, minced

Salt and pepper, to taste

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Veggies: While the pasta cooks, prepare your vegetables. Dice the cucumber, bell pepper, and red onion. Halve the cherry tomatoes and slice the olives. If using frozen corn, thaw it by rinsing it under warm water.

      Make the Dressing: In a separate bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined. Adjust seasoning to taste.

        Combine Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, corn, olives, mini mozzarella balls, and fresh herbs.

          Add Dressing: Pour the dressing over the pasta salad and toss gently until everything is well coated.

            Chill and Serve: Cover the pasta salad and let it chill in the refrigerator for about 30 minutes to allow the flavors to meld. Serve cold or at room temperature in lunchboxes.

              Garnish: If desired, add an extra sprinkle of fresh herbs or a handful of grated cheese before serving.
