This versatile dish is perfect for busy families and can be customized with leftover proteins, seasonal veggies, and your favorite seasonings. Using day-old jasmine rice will give you that desired fluffy texture. Packed with flavor and made in no time, fried rice is not only a comforting meal but also a wonderful way to reduce food waste. Ingredients
  

2 cups cooked jasmine rice (preferably day-old)

1 cup mixed vegetables (peas, carrots, and corn)

2 large eggs, beaten

3 green onions, finely sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 teaspoon rice vinegar

Salt and pepper to taste

Optional protein additions: 1 cup cooked chicken, shrimp, or tofu

Fresh cilantro or parsley for garnish

Instructions
 

Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

    Scramble the Eggs: Add the beaten eggs to the pan, stirring constantly until they are fully cooked. Remove from the pan and set aside.

      Sauté Aromatics: In the same pan, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant.

        Cook Vegetables: Add the mixed vegetables and cook for another 2-3 minutes until they are tender. If using any optional protein, add it now and cook until heated through.

          Add Rice: Push the vegetable mixture to the side of the pan, and add the cooked jasmine rice. Break up any clumps with a wooden spoon.

            Season: Pour the soy sauce, sesame oil, and rice vinegar over the rice. Stir everything together until well combined. Taste and adjust with salt and pepper as needed.

              Mix in Eggs and Onions: Fold in the scrambled eggs and the sliced green onions. Cook for an additional 1-2 minutes to heat through.

                Garnish and Serve: Remove from heat and garnish with fresh cilantro or parsley before serving. Enjoy your Back to School Fried Rice warm!
