2 ripe avocados

1 large tomato, sliced

2 large eggs

4 slices of whole grain or sourdough bread

1 tablespoon olive oil

1 teaspoon lemon juice

Salt and freshly ground pepper, to taste

Red pepper flakes, optional

Fresh basil leaves, for garnish

Prep the Avocado: Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Add lemon juice, salt, and pepper, then mash it roughly with a fork. Set aside.

    Toast the Bread: In a skillet, heat the olive oil over medium heat. Add the slices of bread and toast until golden brown on both sides, about 2-3 minutes per side. Alternatively, use a toaster if preferred.

      Cook the Eggs: In the same skillet, reduce the heat to low and crack the eggs into it. Cook them sunny-side up or to your desired doneness, seasoning lightly with salt and pepper.

        Assemble the Toast: Spread a generous layer of the mashed avocado on each slice of toasted bread. Top with a few slices of tomato and then place the cooked egg on top of the tomatoes.
