2 large whole wheat tortillas

1 cup cooked chicken breast, shredded (or sliced)

1 ripe avocado

1 cup fresh basil leaves

2 tablespoons pine nuts (or walnuts)

2 tablespoons grated Parmesan cheese

2 tablespoons olive oil

1 clove garlic, minced

Juice of 1 lemon

Salt and pepper, to taste

1 medium tomato, diced

½ cup mixed greens (spinach, arugula, or your choice)

Instructions
 

Prepare the Avocado Pesto:

    - In a food processor, combine the ripe avocado, fresh basil leaves, pine nuts, Parmesan cheese, minced garlic, lemon juice, and a pinch of salt and pepper.
