2 cups cooked chicken, shredded or diced

1 ripe avocado, mashed

1/4 cup Greek yogurt or mayonnaise (or a mix of both)

1 tablespoon lime juice

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/4 teaspoon salt (adjust to taste)

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup cilantro or parsley, chopped

Optional: 1/4 cup shredded cheese (like cheddar or feta) for extra richness

Instructions
 

Prepare the Chicken: Use rotisserie chicken for convenience, or boil and shred chicken breast. Make sure it’s cooled before mixing.

    Make the Dressing: In a medium bowl, combine the mashed avocado, Greek yogurt (or mayonnaise), lime juice, garlic powder, onion powder, black pepper, and salt. Mix until smooth and creamy.

      Combine Ingredients: In a large mixing bowl, combine the shredded chicken, halved cherry tomatoes, chopped red onion, and cilantro or parsley.

        Mix the Salad: Pour the creamy avocado dressing over the chicken mixture. Stir gently until everything is evenly coated. Adjust seasoning if necessary.
