Avocado Chicken Quesadillas

Ingredients
  

2 ripe avocados, halved and pitted

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 small red onion, finely chopped

1 jalapeño, seeded and diced (optional for spice)

1/2 cup fresh cilantro, chopped

Juice of 1 lime

1 tsp garlic powder

1 tsp cumin

Salt and pepper, to taste

4 large flour tortillas

2 tbsp olive oil (for cooking)

Sour cream and salsa, for serving

Instructions
 

Prepare Avocado Mixture: In a medium bowl, scoop the avocado flesh and mash it with a fork. Add lime juice, garlic powder, cumin, salt, and pepper. Mix until smooth and creamy. Fold in chopped cilantro, and set aside.

    Combine Filling Ingredients: In a separate bowl, mix the shredded chicken, red onion, diced jalapeño (if using), mozzarella, and cheddar cheese. Season with a little salt and pepper to taste.

      Assemble Quesadillas: Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Place one tortilla in the skillet. Spread half of the avocado mixture evenly over the tortilla, followed by half of the chicken and cheese mixture. Top with another tortilla.

        Cook the Quesadilla: Cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese starts to melt. Carefully flip the quesadilla using a spatula and add another tablespoon of olive oil to the skillet. Cook the other side until golden and crispy, about 3-4 minutes.

          Repeat: Remove the cooked quesadilla from the skillet and cover it with a clean kitchen towel to keep warm. Repeat the process with the remaining tortillas and filling.

            Serve: Cut each quesadilla into wedges. Serve warm with sour cream and salsa on the side.
