2 cups rolled oats

1 cup walnuts, chopped

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup honey or maple syrup

1/2 cup unsweetened applesauce

1 teaspoon vanilla extract

1 large apple, cored and finely chopped (about 1 cup, preferably Granny Smith or Honeycrisp)

1/2 cup dried cranberries (optional)

1/4 cup coconut flakes (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Mix Dry Ingredients: In a large mixing bowl, combine rolled oats, chopped walnuts, cinnamon, nutmeg, and salt. Stir until evenly mixed.

      Combine Wet Ingredients: In another bowl, whisk together the honey (or maple syrup), applesauce, and vanilla extract until well combined.

        Incorporate Chopped Apple: Add the finely chopped apple into the wet mixture, stirring gently to combine. If using, fold in the dried cranberries and coconut flakes.

          Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Mix until everything is well coated and evenly distributed.

            Transfer to Baking Pan: Pour the mixture into the prepared baking pan. Use a spatula to press it down firmly and spread it evenly into the corners.

              Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the edges start to turn golden brown.

                Cool and Slice: Once baked, remove the pan from the oven and allow it to cool in the pan for about 10 minutes. Use the overhanging parchment to lift the bars out onto a cutting board. Let them cool completely before slicing into bars.
