1 teaspoon salt

1 tablespoon granulated sugar

1 cup unsalted butter, chilled and diced

6 to 8 tablespoons ice water

6 to 8 medium-sized apples (such as Granny Smith and Honeycrisp), peeled, cored, and sliced

¾ cup granulated sugar (adjust based on apple sweetness)

2 tablespoons lemon juice

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

2 tablespoons all-purpose flour

1 tablespoon unsalted butter, cut into small pieces

1 egg (for egg wash)

1 tablespoon milk (for egg wash)

Instructions
 

Prepare the Flaky Crust:

    - In a large bowl, mix the flour, salt, and sugar together.

      - Cut in the cold, diced butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

        - Stir in the ice water, one tablespoon at a time, until the dough comes together. Divide the dough in half, shape into 2 disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

          Make the Apple Filling:

            - In a large bowl, combine sliced apples, sugar, lemon juice, cinnamon, nutmeg, and flour. Toss until the apples are evenly coated. Let it sit for about 15 minutes to allow the juices to meld.

              Preheat the Oven:

                - Preheat your oven to 425°F (220°C).

                  Roll out the Dough:

                    - On a floured surface, roll out one dough disk into a circle about 12 inches in diameter. Transfer it to a 9-inch pie dish, pressing it down to fit. Trim excess dough hanging over the edges.

                      Fill the Pie:

                        - Pour the apple mixture into the prepared pie crust, spreading it evenly. Dot the top with small pieces of butter.

                          Top Crust:
