Ingredients

For the Apple Pie Filling:

2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1/4 cup brown sugar

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1 tablespoon lemon juice

1 tablespoon butter

For the Cupcake Batter:

1 1/2 cups all-purpose flour

1 cup granulated sugar

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1/2 cup buttermilk

For the Topping:

1 cup powdered sugar

2 tablespoons milk

1/4 teaspoon vanilla extract

1 teaspoon cinnamon (for sprinkling)

Instructions

Make the Apple Pie Filling:

    - In a medium skillet, melt the butter over medium heat. Add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for about 5-7 minutes until the apples are tender but still firm. Remove from heat and let cool.

      Prepare the Cupcakes:

        - Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.

          - In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.

            - In another bowl, cream the softened butter until light and fluffy. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.

              - Alternate adding the dry ingredients and the buttermilk to the butter mixture, starting and ending with the flour. Mix until just combined.

                Assemble the Cupcakes:

                  - Fill each cupcake liner about halfway with the cupcake batter. Add a spoonful of apple pie filling into the center of each cupcake.

                    - Top the filling with additional cupcake batter until the liners are about 3/4 full.

                      Bake:

                        - Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the cupcake comes out clean. Let them cool in the pan for 5 minutes before transferring them to a wire rack.

                          Prepare the Topping:

                            - In a small bowl, mix together powdered sugar, milk, and vanilla extract until smooth. If the mixture is too thick, add a bit more milk, one teaspoon at a time.

                              Decorate:

                                - Once the cupcakes are cooled, drizzle the glaze over the tops and sprinkle with a pinch of cinnamon.

                                  Serve:

                                    - Enjoy these delicious Apple Pie Stuffed Cupcakes warm or at room temperature with a scoop of vanilla ice cream for an extra treat!
