6 slices of bread (white or whole grain)

1 large apple (Granny Smith or Honeycrisp), peeled and diced

2 tablespoons brown sugar

1 teaspoon cinnamon

1 tablespoon lemon juice

1 egg

1/4 cup milk

1 teaspoon vanilla extract

2 tablespoons butter (for cooking)

Optional: powdered sugar (for dusting)

Optional: maple syrup (for serving)

Instructions
 

Prepare the filling: In a medium bowl, combine the diced apple, brown sugar, cinnamon, and lemon juice. Mix well and set aside to allow the flavors to meld.

    Flatten the bread: Using a rolling pin, gently flatten each slice of bread until it is about 1/4 inch thick.

      Add the filling: Place about 1 tablespoon of the apple mixture on one edge of each flattened bread slice. Carefully roll the bread up tightly, enclosing the filling completely.

        Prepare the egg mixture: In a shallow bowl, whisk together the egg, milk, and vanilla extract until well blended.

          Dip the roll-ups: Heat a skillet over medium heat and melt 1 tablespoon of butter. Dip each roll-up into the egg mixture, ensuring all sides are coated.

            Cook the roll-ups: Place the roll-ups seam side down into the skillet. Cook for about 2-3 minutes on each side or until golden brown and crisp. You may need to add more butter for subsequent batches.

              Serve warm: Once cooked, transfer the roll-ups to a plate. If desired, dust with powdered sugar and serve with maple syrup on the side.
