Apple Pecan French Toast Cups

Ingredients
  

6 cups of stale bread ( baguette or brioche works well), cut into 1-inch cubes

2 cups of milk

4 large eggs

1/4 cup of granulated sugar

1 teaspoon of vanilla extract

1 teaspoon of ground cinnamon

1/4 teaspoon of nutmeg

2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp)

1/2 cup of pecans, chopped

1/4 cup of brown sugar

1 tablespoon of unsalted butter, melted

Pinch of salt

Maple syrup (for serving)

Powdered sugar (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a standard muffin tin with butter or cooking spray.

    Prepare the Bread: In a large mixing bowl, combine the cubed bread and diced apples. Mix well to ensure the apple pieces are evenly distributed among the bread cubes.

      Make the Custard: In another bowl, whisk together the milk, eggs, granulated sugar, vanilla extract, cinnamon, nutmeg, and a pinch of salt until fully combined and slightly frothy.

        Combine: Pour the custard mixture over the bread and apple mixture, using a spatula to gently fold everything together until the bread is well-coated. Let it sit for about 10 minutes so the bread can absorb the custard.

          Add Pecans and Brown Sugar: In a small bowl, mix the chopped pecans with the melted butter and brown sugar. Set aside.

            Fill the Muffin Tin: Spoon the French toast mixture into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle the pecan and brown sugar mixture on top of each filled cup.

              Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

                Cool and Serve: Remove from the oven and allow to cool for a few minutes before gently running a knife around the edges of each cup to help release them.

                  Garnish: Serve warm, drizzled with maple syrup and a dusting of powdered sugar if desired.
