For the crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the cheesecake filling:

24 oz cream cheese, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ cup sour cream

For the apple filling:

3 cups peeled and sliced apples (about 4 medium apples)

¾ cup brown sugar

2 teaspoons ground cinnamon

1 tablespoon lemon juice

2 tablespoons all-purpose flour

For the crisp topping:

1 cup old-fashioned rolled oats

½ cup all-purpose flour

½ cup brown sugar

½ teaspoon ground cinnamon

½ cup unsalted butter, melted

Instructions
 

Prepare the Crust:

    Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan, making sure it’s evenly distributed. Bake for 10 minutes, then set aside to cool.

      Make the Cheesecake Filling:

        In a large mixing bowl, beat together the softened cream cheese and granulated sugar until creamy and smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, ground cinnamon, and sour cream until fully combined. Pour the cheesecake mixture over the cooled crust.

          Prepare the Apple Filling:

            In a separate bowl, toss the sliced apples with brown sugar, ground cinnamon, lemon juice, and flour until the apples are well coated. Spread the apple mixture evenly over the cheesecake layer.

              Make the Crisp Topping:

                In another bowl, combine the rolled oats, flour, brown sugar, and ground cinnamon. Drizzle the melted butter over the mixture and stir until crumbly. Sprinkle the crisp topping evenly over the apples.

                  Bake the Cheesecake:

                    Place the assembled cheesecake in the preheated oven and bake for 60-70 minutes, or until the cheesecake is set and the edges are lightly browned. The center may still be slightly jiggly; it will firm up as it cools.

                      Cool and Serve:

                        Turn off the oven and leave the cheesecake inside with the door slightly ajar for an additional hour. Remove from the oven and let it cool completely at room temperature.
