1 ½ cups all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

2 large eggs

1 ¼ cups milk

¼ cup vegetable oil

1 teaspoon vanilla extract

For the Apple Filling:

2 medium apples (Granny Smith or Honeycrisp), peeled and diced

2 tablespoons unsalted butter

2 tablespoons brown sugar

1 teaspoon ground cinnamon

¼ teaspoon nutmeg

1 tablespoon lemon juice

For Assembly:

Maple syrup (for drizzling)

Make the Apple Filling:

    In a medium skillet, melt the butter over medium heat. Add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for about 5-7 minutes, stirring occasionally, until the apples are tender but still hold their shape. Remove from heat and set aside.

      Prepare the Waffle Batter:

        In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and ground cinnamon. In a separate bowl, beat the eggs, then add the milk, vegetable oil, and vanilla extract. Mix until well combined. Slowly pour the wet ingredients into the dry ingredients, stirring just until combined. Do not overmix; some lumps are fine.

          Preheat the Waffle Iron:

            Preheat your waffle iron according to the manufacturer’s instructions.

              Cook the Waffles:

                Lightly grease the waffle iron with cooking spray or a brush of oil.
