1 cup whole wheat flour

1/2 cup brown sugar (packed)

1/2 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsweetened applesauce

1/2 cup milk (dairy or non-dairy)

1 large egg

1/4 cup coconut oil (melted) or vegetable oil

1 teaspoon vanilla extract

1 1/2 cups diced apples (peeled and cored, any variety)

Optional: 1/2 cup chopped walnuts or pecans

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, whole wheat flour, brown sugar, baking soda, baking powder, ground cinnamon, and salt. Whisk these together until they are well blended.
