Ingredients

2 cups rolled oats

1 cup unsalted nuts (walnuts or almonds), chopped

1 cup dried apples, chopped

1/2 cup honey or maple syrup

1/2 cup creamy almond butter or peanut butter

1 teaspoon cinnamon

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup mini chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper, leaving some overhang for easy removal later.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, dried apples, cinnamon, and salt. Stir gently to ensure everything is evenly distributed.

Heat Wet Ingredients: In a small saucepan over low heat, combine the honey (or maple syrup) and almond butter. Stir until melted and smooth. Remove from heat and add in the vanilla extract.

Combine Wet and Dry: Pour the heated mixture over the dry ingredients. Mix thoroughly with a spatula or wooden spoon until all the dry ingredients are evenly coated.

Add Chocolate Chips: If you’re using chocolate chips, fold them into the mixture now for a delightful chocolatey surprise in each bite!

Press into Dish: Transfer the mixture to the prepared baking dish, spreading it out evenly. Use the back of a spatula or your hands (dampen them slightly for ease) to press the mixture firmly into the pan.

Bake: Bake in the preheated oven for about 20-25 minutes, or until the edges are golden brown. Keep an eye on them to avoid burning.

Cool and Slice: Remove from the oven and allow to cool in the pan for at least 10 minutes. Using the parchment overhang, lift the granola slab out of the pan and let it cool completely on a cutting board.

Cut into Bars: Once cooled, slice into 12 equal bars or your desired sizes. Store in an airtight container at room temperature for up to a week or in the fridge for longer freshness.
