6 cups day-old bread, cubed (preferably brioche or challah)

2 large apples, peeled, cored, and chopped (Granny Smith or Honeycrisp for tartness)

4 large eggs

1 cup whole milk

1/2 cup heavy cream

1/2 cup sugar

1 tablespoon vanilla extract

1 tablespoon ground cinnamon (plus extra for topping)

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup raisins or chopped walnuts (optional)

1/4 cup brown sugar (for topping)

3 tablespoons butter, melted (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or line it with muffin liners.

    Prepare the Bread Base: In a large mixing bowl, combine the cubed bread and chopped apples. If you're using raisins or walnuts, add them here. Gently toss to distribute the ingredients evenly.

      Make the Custard Mixture: In a separate bowl, whisk together the eggs, whole milk, heavy cream, sugar, vanilla extract, ground cinnamon, nutmeg, and salt until smooth.

        Combine Bread and Custard: Pour the custard mixture over the bread and apples. Gently fold the mixture to ensure that the bread is well-coated and absorbing the custard. Let it sit for about 15 minutes to soak in.

          Fill the Muffin Tin: Evenly distribute the soaked bread mixture into the prepared muffin tin, filling each cup about 3/4 full.
