Apple Cinnamon French Toast Bake

8 slices of day-old brioche or challah bread

2 large apples, peeled, cored, and chopped (Gala or Honeycrisp work well)

4 large eggs

1 cup whole milk

1/4 cup packed brown sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1 tablespoon unsalted butter (for greasing)

Optional: maple syrup, whipped cream, or powdered sugar for serving

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with the butter.

    Cut the brioche or challah bread into 1-inch cubes and evenly distribute them in the greased baking dish.

      In a medium bowl, toss the chopped apples with 1 tablespoon of brown sugar and 1/2 teaspoon of cinnamon. Scatter the apple mixture evenly over the bread cubes.

        In a large bowl, whisk together the eggs, milk, the remaining brown sugar, vanilla extract, ground cinnamon, nutmeg, and salt until well combined.

          Pour the egg mixture evenly over the bread and apple layers, making sure all the bread pieces are soaked. Gently press down the bread with a spatula to ensure they absorb the liquid.

            Cover the baking dish with plastic wrap and refrigerate for at least 30 minutes, or overnight for a richer flavor.

              If refrigerated overnight, let the dish sit at room temperature for 15-20 minutes before baking.

                Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the edges are slightly crispy.

                  Remove the French toast bake from the oven and let it cool for a few minutes. Serve warm with maple syrup, a dollop of whipped cream, or a sprinkle of powdered sugar for added sweetness.
