Ingredients

12 large cremini or portobello mushrooms, stems removed

1 cup cream cheese, softened

1/2 cup grated Parmesan cheese

1/2 cup cooked and crumbled Italian sausage (or plant-based sausage)

1/4 cup breadcrumbs (preferably panko for extra crunch)

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped (optional)

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Olive oil spray for cooking

Instructions

Prepare the Mushrooms: Gently clean the mushrooms with a damp cloth to remove any dirt. Carefully remove the stems and set them aside.

Make the Filling: In a mixing bowl, combine the softened cream cheese, Parmesan cheese, cooked sausage, breadcrumbs, minced garlic, parsley, oregano, red pepper flakes, salt, and pepper. Mix until well-combined and creamy.

Stuff the Mushrooms: Take a generous spoonful of the filling and stuff each mushroom cap, pressing down slightly to ensure it adheres well.

Preheat the Air Fryer: Preheat your air fryer to 350°F (175°C) for about 3-5 minutes.

Cook the Stuffed Mushrooms: Once preheated, place the stuffed mushrooms in the air fryer basket. Make sure to leave a little space between each mushroom for even cooking. Lightly spray the tops of the mushrooms with olive oil for a golden finish.

Air Fry Them: Cook the mushrooms in the air fryer for about 10-12 minutes or until they are golden and the filling is bubbly.

Serve and Enjoy: Carefully remove the stuffed mushrooms from the air fryer and let them cool for a minute. Plate them up and serve warm, garnishing with a sprinkle of fresh parsley if desired.
