Ingredients
  

1 medium eggplant, sliced into ½ inch rounds

1 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (preferably seasoned)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 cup marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish (optional)

Cooking spray or olive oil for drizzling

Instructions
 

Prepare the Eggplant:

    - Sprinkle salt over the eggplant slices and let them sit for about 30 minutes to draw out excess moisture. Rinse and pat them dry with paper towels.

      Set Up Breading Stations:

        - In three separate shallow dishes, place flour in one, beaten eggs in the second, and a mixture of breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and black pepper in the third.

          Bread the Eggplant:

            - Dip each eggplant slice into the flour, shaking off the excess.
