Air Fryer Chicken Skewers

1 lb (450g) boneless, skinless chicken thighs or breasts, cut into 1-inch cubes

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

½ teaspoon black pepper

½ teaspoon salt

1 tablespoon lemon juice

1 bell pepper, cut into 1-inch pieces

1 red onion, cut into 1-inch chunks

Wooden skewers (soaked in water for 30 minutes if using)

Instructions
 

In a large mixing bowl, combine the olive oil, soy sauce, honey, smoked paprika, garlic powder, onion powder, ground cumin, black pepper, salt, and lemon juice. Mix thoroughly to create the marinade.

    Add the chicken cubes to the marinade, ensuring they are well-coated. Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

      While the chicken is marinating, soak the wooden skewers in water if you haven’t done so yet. This prevents them from burning in the air fryer.

        Preheat your air fryer to 400°F (200°C) for about 5 minutes.

          After marination, thread the chicken cubes onto the skewers, alternating with pieces of bell pepper and red onion for added color and flavor.

            Place the assembled skewers in the air fryer basket in a single layer. If necessary, work in batches to avoid overcrowding.

              Cook in the air fryer for 10-12 minutes, flipping the skewers halfway through for even cooking. The chicken should reach an internal temperature of 165°F (75°C) and have a nice golden-brown color.

                Once cooked, remove the skewers from the air fryer and let them rest for a couple of minutes before serving.

                  Serve the chicken skewers hot with your favorite dipping sauce or over a bed of rice or a fresh salad.
