4 ripe fresh peaches, diced

1 cup all-purpose flour

1 cup granulated sugar

1 tsp baking powder

½ tsp salt

½ cup unsalted butter, melted

1 cup milk

1 tsp vanilla extract

1 tsp ground cinnamon

1 scoop vanilla ice cream (optional, for serving)

Fresh mint leaves (for garnish, optional)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare Peaches: In a medium mixing bowl, toss the diced peaches with 2 tablespoons of granulated sugar and let them sit for about 5 minutes to macerate.

      Mix Dry Ingredients: In a large bowl, whisk together the flour, remaining sugar (¾ cup), baking powder, and salt.
