2 cups cooked shredded chicken (rotisserie chicken works great)

4 cups green cabbage, shredded

1 cup red cabbage, shredded

1 cup carrots, grated

1 bell pepper, thinly sliced (any color)

1/4 cup green onions, chopped

1/2 cup fresh cilantro, chopped

1/2 cup unsalted roasted peanuts, roughly chopped

For the Dressing:

1/4 cup creamy peanut butter

2 tablespoons soy sauce (low-sodium)

2 tablespoons rice vinegar

1 tablespoon fresh lime juice

1 tablespoon honey or maple syrup

1 teaspoon sesame oil

1 clove garlic, minced

1 teaspoon grated fresh ginger

Pinch of red pepper flakes (adjust to taste)

Prepare the Chicken: If using rotisserie chicken, shred the meat into bite-sized pieces. Set aside.

    Make the Dressing: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, lime juice, honey or maple syrup, sesame oil, minced garlic, grated ginger, and red pepper flakes until smooth and well combined. If the dressing is too thick, add a tablespoon of warm water to loosen it up.
