Ingredients

4 slices of sourdough or whole-grain bread

4 ounces of fresh mozzarella cheese, sliced

4 ounces of sharp cheddar cheese, shredded

1 medium ripe tomato, sliced

1/4 cup fresh basil leaves

2 tablespoons unsalted butter, softened

1 tablespoon olive oil

Salt and pepper to taste

Optional: Balsamic glaze for drizzling

Instructions

Prep the Ingredients: Start by slicing the mozzarella cheese and tomato into even slices. Rinse and pat dry the fresh basil leaves.

Assemble the Sandwich: On two slices of bread, layer the mozzarella cheese, then add a layer of tomato slices, followed by a few basil leaves. Sprinkle with salt and pepper to taste. Top with the shredded cheddar cheese and place the remaining slices of bread on top to form two sandwiches.

Prepare the Pan: Heat a large skillet over medium heat. Add the olive oil and allow it to warm for a minute.

Butter the Bread: Spread the softened butter on the outer sides of each sandwich. This will give the bread a nice golden color as it cooks.

Grill the Sandwiches: Place the sandwiches in the skillet and cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted. If needed, reduce the heat to prevent burning while ensuring the cheese is properly melted.

Serve: Once grilled to perfection, remove the sandwiches from the skillet. If desired, drizzle with balsamic glaze for an added layer of flavor, then slice each sandwich in half.

Enjoy: Serve hot with a side of tomato soup or your favorite dipping sauce for a delicious, comforting meal.
